This July, The Conclave Verde, located at 2052, Chak Garia, Panchasayar, Kolkata – 700094, invites the city to experience the extraordinary variety of Indian cuisine with its Indian Culinary Tour, a specially curated à la carte festival that runs from 5th to 31st July 2025. Designed as a vibrant celebration of the country’s rich culinary heritage, the tour brings together iconic dishes from four distinct regions of India, ending on a sweet note with a trio of classic Bengali desserts. Each dish is rooted in tradition and crafted with attention to detail, offering diners an opportunity to savour the diverse flavours that define India’s gastronomic identity.

“Food is one of the most powerful expressions of culture, and with the Indian Culinary Tour, we’ve tried to bring together flavours that are not just regional but deeply emotional,” said Manish Pandey, Business Head, Ambuja Neotia Clubs. “Each dish on the menu is a window into a way of life, and this festival is our tribute to the heritage that binds us through taste and memory.”

From the comforting familiarity of Bengal’s Shukto with Ghee Bhaat, Bhaja Moonger Dal with Aloo Jhuri Bhaja, and celebratory favourites like Chingri Malai Curry, Kasha Mangsho with Loochi, and Katla Kalia, the menu carries the unmistakable warmth of eastern India’s kitchen traditions. Magadh lends its earthy charm through humble yet hearty fare like Sattu Paratha with Aloo ki Sabji and Curd and Palak, Lal Chana ki Sabzi with Poori, alongside spiced favourites like Khara Bhuna Murgh Masala and Champaran Mutton Curry — robust and full of slow-cooked flavour.

The culinary influences of Awadh find voice in succulent kebabs and delicate curries, from Mutton Galouti and Murgh Lasooni Kebab to the royal gravitas of Murgh Awadhi Korma with Garlic Naan and Awadhi Mutton Rogan Josh with Khushka Rice. Vegetarians are just as well served with dishes like Bag-e-Sabji with Lachha Paratha and Vrat ki Sabji with Kuttu ki Puri, offering a flavourful, festive twist on satvik dining.

From Haryana, the menu brings north Indian comfort food at its finest — Rajma Masala with Steamed Rice, Matar Paneer with Butter Naan, and Chana Masala with Masala Kulcha form the kind of soulful, satisfying pairings that generations have grown up loving. Diners can also enjoy smoky, tandoori-style indulgences such as Bhatti da Murg, Tandoori Chicken Butter Masala with Reshmi Lachha Paratha, and Mahi Ajwaini Tikka, a fish dish delicately perfumed with carom seeds and spices.

Rounding off this culinary voyage is a celebration of Bengal’s sweet traditions. Guests can choose from indulgent desserts like the layered, ghee-laden Sarbhaja, oven-finished Baked Rosogolla, and syrup-soaked Balushahi or Kesaria Shahi Tukra — each one a satisfying finale to a regional feast.

With menu prices ranging from ₹149 to ₹649, the Indian Culinary Tour offers diners the freedom to chart their own path across India’s vibrant culinary map — whether through a single nostalgic dish or a full-course exploration spanning states. The Conclave Verde’s festival is not a linear journey but a curated collection of tastes, traditions, and stories served on every plate — an ode to the extraordinary diversity that makes Indian cuisine unlike any other in the world.
